It's not every day you find me walking around Baton Rouge wearing camouflage.

But Wednesday of this week was one of those days! Chef John Folse is filming his fall 2010 television series "After the Hunt" for Louisiana Public Broadcast and LC editor Jyl Benson and I were invited to be part of the studio audience. Camouflage attire was "strongly advised".

There's so much good news, it's hard to know where to start. First and foremost, it was great to wake up knowing that, for the first time in 85 days, oil isn't gushing into the Gulf of Mexico. A big cheer swept through the farmer's market yesterday afternoon.

And want to help out the fishermen affected by the oil spill while eating some of the finest, freshest seafood around, eat at any Spahr's Seafood on Tuesday, June 29th. Proceeds from the day will be donated to Friends of Grand Isle. I highly recommend the catfish chips—that's what was on my plate for lunch today. LC editor Jyl Benson, photographer Sara Essex, Ashley Roth of the Louisiana Seafood Promotion and Marketing Board, and I wheeled in around 2:00 this afternoon on our way back from Grand Isle and left supremely happy and full about an hour later.

Seafood From the Gulf of Mexico is Safe!

While the ongoing oil spill in the Gulf of Mexico is a tragedy of as yet unknown scope, as of May 4 more than 75% of the Gulf is still open to fishermen and remains unaffected. So far, all waters west of the Mississippi River are open and are being actively fished, ensuring fresh, tasty, SAFE seafood for our restaurants and markets. We encourage you to go out and eat some seafood this weekend, and select some of the recipes linked below to prepare at home for friends and family!

What to do with those leftover Easter eggs? A challenge!

I remember watching my cousins devour Easter eggs when I was a kid--I was a picky eater and just could not swallow a boiled egg no matter how prettily colored. In fact, until I was 30, I refused to eat eggs in any way but scambled. Thankfully, my palate expanded as I matured, and I love eggs in most any preparation.
