Tips & Techniques: How to Season a Cast Iron Skillet

1 Getting Started

With very hot soapy water, wash the piece thoroughly to remove
the protective waxy coating applied by the manufacturer

2 Dry it Thoroughly

3 Vegetable Shortening

Liberally apply vegetable shortening to the entire pan, covering
every pore. Rub it in well.

4 Wipe away Excess Oil

5 Bake on the Seasoning

Place the skillet upside down on a rack in the middle of your oven. Bake
at 350ºF for one hour. Place foil on the bottom oven rack to catch
any excess oil. Turn off the heat and allow the skillet to cool in the
oven overnight. To store, oil it lightly with shortening.

I find that preheating iron

I find that preheating iron to about 250 prior to applying oil helps coating to "reach" down into the porous iron. Older glass slick iron surfaces need to be wiped down well to remove any excess oil as it will spot bad too much is left on the iron.
