Fiesta Chicken Rollups
- 1 Rotisserie chicken deboned and chopped
- 2 8-ounce packages of cream cheese
- 2 cups sour cream
- 1 package Ranch or Fiesta Ranch Dressing (dry package mix)
- 1 small can black olives
- 1/2 cup chopped roasted red peppers
- 1/4 cup diced jalapeƱo peppers (for milder filling use mild green chilies)
- 1/4 cup green onion tops
- 1 can corn, well drained
- large flour tortillas or one mold
Mix together softened cream cheese and sour cream. Mix in Ranch dressing packet and all other ingredients. Spread about 1/3 cup onto each flour tortilla. Roll up and slice. This is enough filling for one large package or more of flour tortillas depending on the amount of filling used. If you are going to make these ahead of time roll and slice right before eating them. Serve with extra Fiesta Ranch dip or salsa and sour cream.
If you use this as a mold, wipe the inside of a shaped mold with mayonnaise or sour cream. Pour filling into mold and refrigerate 4 to 6 hours or until slightly firm. Turn out onto a large platter. Serve with crackers.
