Ployes (Buckwheat Pancakes)

Makes 12—15 pancakes

 

Ingredients:

 

  • 1 cup buckwheat flour
  • 1/2 cup white flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3/4 cup cold water
  • 1 3/4 cups boiling water

 

Instructions:

 

Mix the dry ingredients in a large bowl. Add the cold water and mix to form a thick dough. Add the boiling water and stir the batter until it is smooth. Heat a cast iron skillet until a small amount of batter sizzles when dropped on the surface. The skillet should not be greased. Drop a large spoonful of batter on the skillet. Cook the ployes, without turning them, until the top surface is dry. Put the individual ployes on a plate and cover them to keep them warm and moist. Spread with butter before serving.
