It’s hard to beat the flavor combination of naturally sweet bananas, yams, and crunchy walnuts in this nutrition-packed bread.
Preheat the oven to 350°F. Coat a 9x5x3-inch nonstick loaf pan with nonstick cooking spray. In a large bowl, mix together the bananas, sweet potatoes, brown sugar, oil, vanilla, egg, and egg white. In a small bowl, combine the flour, baking soda, baking powder, and cinnamon. Stir the flour mixture into the banana mixture, mixing just until combined. Stir in the walnuts. Pour batter into the prepared pan and bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
