Makes 12 jumbo muffins
Mix together dry ingredients in a medium size bowl and set aside. In a separate bowl, beat egg until frothy, then add milk and melted shortening.Mix well. Pour milk mixture into flour mixture. Stir quickly and lightly, but do not beat. (Mixture will still look a bit lumpy.) Gently fold in blueberries. Lightly grease muffin pan with non-stick spray, and fill muffin cups 2/3 full. Sprinkle lightly with sugar before putting in the oven. Bake at 425°F for about 15 minutes.
