Holiday Herb Tomato Bread and Spread

Ingredients for Bread:

 

  • 1 package herb quick bread mix (appr. 1 pound)
  • 1 medium vine-ripe tomato, coarsely chopped, or 1 cup of canned tomatoes, chopped and drained (reserve 2 tablespoons for spread)
  • 2 tablespoons sun-dried tomatoes packed in olive oil, drained and chopped
  • 1/4 cup Parmesan cheese, shredded
  • 1/2 teaspoon dried marjoram, chopped (or 1/3 teaspoon dried oregano)
  • 12 ounces beer or lemon-lime carbonated beverage at room temperature

 

 

Ingredients for Spread:

 

  • 8 ounces reduced-fat cream cheese, softened
  • 1 to 2 tablespoons milk
  • 2 tablespoons tomatoes, chopped
  • 1 teaspoon sun-dried tomatoes, chopped
  • 1/4 teaspoon dried marjoram, chopped (or a pinch of dried oregano)
  • 1 tablespoon dried herb blend (included in HERBS by Sarah mix)

 

 

Instructions for Bread:

Place bread mix in a large bowl with remaining ingredients. Fold gently until flour is evenly moistened, about 1 minute. Place in pan(s) and bake according to package directions.

 

 

Instructions for Spread:

Combine ingredients in a food processor and pulse a few times to combine. Transfer to a serving dish and garnish with herb flowers or seeds. Allow to rest in refrigerator at least 2 hours for flavors to blend. Serve spread with warm bread.
