Blackberry Cream Pie

Makes 2 9-inch pies

 

Ingredients:

 

  • 1 quart blackberries, washed
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 3 tablespoons corn starch
  • 1 pint whipping cream
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 package cream cheese (8 ounces), softened
  • 2 pie shells (9-inch)

 

Instructions:

 

Combine the blackberries, sugar, salt and corn starch. Mash and cook the berry mixture over medium heat until thickened. Remove from heat and cool. Whip the cream and combine it with the powdered sugar, vanilla and cream cheese. Pour into the pie crusts and top with the cooked berries. Chill several hours before serving.
