Everything’s Coming up Roses Chicken

Makes 4 servings

 

 

You’ll need rose petals and rose water (available in specialty markets). When preparing rose petals, cut away bitter sepal and bitter white part of petals and remove pollen.

 

Ingredients:

 

  • 1 frying chicken, cut into 8 pieces (or use your favorite pieces)
  • 1/4 cup rose water
  • 1/2 cup flour
  • 1/2 cup graham crackers, finely crushed
  • 3 tablespoons rose petals, finely chopped (preferably dark-colored varieties)
  • 1/8 teaspoon salt

 

Instructions:

 

Wash chicken and pat dry. Place in a nonmetallic dish and add rosewater; turn to coat. Marinate for up to 4 hours. Preheat oven to 350°F.Mix rose petals with flour, cracker crumbs and salt. Coat chicken thoroughly with the mixture. Place chicken in a lightly greased pan and bake for about 45 minutes to 1 hour, until juices run clear.
