Vinegar-Roasted Cornish Game Hens

Makes 4 servings

Ingredients:

 

 

  • 2 Cornish game hens (20 ounces each), split in half, rinsed and patted dry
  • Salt and pepper, to taste
  • 2 tablespoons each of chopped pineapple sage, lemon balm and orange mint (or herbs of choice)
  • 2 tablespoons olive oil
  • 1/4 cup herbal vinegar (preferably made with one or more of the rubbing herbs)

 

Instructions:

 

Preheat oven to 350°F. Rub the hen halves with salt, pepper and herbs; lightly coat with olive oil and place in a shallow baking dish. Drizzle with vinegar. Roast about 45 minutes, basting 3 or 4 times with pan juice. Hens are ready when brown and crispy and joints move easily. Remove from oven and allow to rest about 10 minutes before serving.
