Makes 4 servings
Preheat oven to 350°F. Rub the hen halves with salt, pepper and herbs; lightly coat with olive oil and place in a shallow baking dish. Drizzle with vinegar. Roast about 45 minutes, basting 3 or 4 times with pan juice. Hens are ready when brown and crispy and joints move easily. Remove from oven and allow to rest about 10 minutes before serving.
