Spinach Avocado Salad With Blueberry Vinaigrette Dressing

Makes 8 servings

 

 

Ingredients for Salad:

 

  • 4 cups baby spinach leaves
  • 1 red onion, thinly sliced in rings
  • 2 cups romaine lettuce leaves (use the small, inner leaves)
  • 1 large avocado, sliced
  • 1 cup almonds, sliced
  • 1 cup fresh blueberries

 

 

Ingredients for Blueberry Vinaigrette:

 

  • 3 tablespoons fresh blueberries
  • 3 tablespoons blueberry vinegar
  • 2 tablespoons honey
  • 1 teaspoon sea salt
  • 1/2 cup extra virgin olive oil

 

Instructions:

 

Toss spinach and onion rings in a salad bowl. Slide romaine leaves in around edge of bowl, and arrange avocado slices on top of spinach and onions. Scatter almonds and blueberries over avocados.

 

 

To make blueberry vinaigrette, place blueberries, vinegar and honey in a blender. Blend until smooth. Add salt and drizzle in oil while blending. Drizzle vinaigrette over salad immediately before serving.
