Blackened Salmon

Makes 4 servings

 

Ingredients:

 

  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 1 teaspoon light brown sugar
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 4 fresh farmed salmon fillets (6 ounces each)

 

Instructions:

 

In a small bowl, mix together the paprika, chili powder, brown sugar, pepper and salt. Pat on both sides of the salmon. In a nonstick skillet, over medium high heat, cook salmon on each side, about 4 to 5 minutes per side, or until done. Or, preheat oven to 400°F, spray salmon with nonstick cooking spray and roast for 15 minutes, or until fish flakes easily with fork.
