Dale’s Delectable Fried Fish

Makes 4 servings

 

Ingredients:

 

  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 1 teaspoon light brown sugar
  • 1 teaspoon pepper
  • 1/2 teaspoon salt
  • 4 fresh farmed salmon fillets (6 ounces each)

 

Instructions:

 

Prepare dry mix by combing fish fry, corn meal and spice blend in a large bowl. Prepare egg wash by whipping eggs, milk and Tabasco together in a large bowl.

 

Preheat oil to 350°F. Use enough oil to completely submerge fish. Dip fillets in egg wash, then dust in dry mix. Place in oil. Deep fry until fish floats to the top and is golden brown (approximately 4 minutes). Drain and serve hot.
