Fried Catfish With Scallion Hush Puppies

Makes 4 servings

 

 

Catfish:

 

  • 4 catfish fillets
  • 2 cups corn oil
  • 1/2 cup white flour
  • 1/2 cup cornmeal
  • 1 teaspoon paprika
  • Salt and pepper, to taste

 

 

Hush Puppies:

 

  • 1/2 cup flour
  • 1 cup cornmeal
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 egg
  • 1/2 cup scallions, minced

 

Instructions for Catfish:

In a heavy skillet, heat oil to about 375°F.Mix together white flour and cornmeal, then set aside. Sprinkle catfish fillets with paprika, salt and pepper, then coat both sides with flour and cornmeal mixture. Place fillets in hot oil and fry until bottoms are golden brown, generally 4 to 5 minutes.

 

Turn fillets over and fry other side until golden brown as well.

 

Instructions for Hush Puppies:

In a bowl, mix together flour, cornmeal, salt, sugar, baking powder and baking soda.Mix well, and then add the buttermilk and egg. Blend together until dough is thick enough to flow easily from the spoon. Mix in the scallions. Slowly drop teaspoonfuls of hush puppy batter into the hot oil used for frying fish. Fry until hush puppies are golden, remove, then drain off excess oil. Serve catfish with scallion hush puppies, coleslaw and ketchup.
