Crawfish Boil

Weekend crawfish boils with family and friends are one of the best parts of Louisiana springtime. Every family uses their own special blend of herbs, spices, citrus, and fixings for their boils, but we’ve seen an exciting new ingredient popping up more often recently: pineapple. The tropical fruit gives boils an exotic tartness, and the sweet-and-spicy 
pineapple can’t be beat. This year, try out our new crawfish boil with a few extra sides to keep it interesting.

Sweet and Spicy Crawfish Boil

Ingredients
  1. 4 gallons cold water
  2. 1 cup Crawfish Boil Mix (recipe follows)
  3. 2 heads garlic, halved crosswise
  4. 1 pound smoked sausage, cut into 3-inch pieces
  5. 2½ pounds small red and yellow potatoes
  6. 1 pineapple, peeled, cored and sliced into half moons
  7. 8 pounds live crawfish
  8. Crawfish Boil Dip (recipe follows)
Instructions
  1. To a 40-quart stockpot, add 4 gallons water. Add Crawfish Boil Mix and garlic. Bring to a boil over medium high heat; cook 15 minutes. Add sausage, potatoes, and pineapple, and cook until potatoes are tender, about 10 minutes. Add crawfish, and cook 3 minutes. Turn off heat, and let stand 10 minutes. Drain, and serve warm with Crawfish Boil Dip, if desired.

Ingredients
  1. 6 tablespoons fresh lime zest
  2. 6 tablespoons fresh lemon zest
  3. ¾ cup kosher salt
  4. 4 teaspoons smoked paprika
  5. 2 teaspoons cayenne pepper
  6. 2 teaspoons dried thyme
  7. 1 teaspoon garlic powder
Instructions
  1. Preheat oven to 350°. On a rimmed baking sheet, add zests; bake until dried but not browned, 2 to 3 minutes. In medium bowl, combine zest, salt, and remaining ingredients.

Crawfish Boil Dip

Ingredients
  1. 1 cup mayonnaise
  2. ¼ cup Creole mustard
  3. 2 tablespoons Worcestershire sauce
  4. 2 tablespoons hot sauce
  5. 1 tablespoon ketchup
  6. ½ teaspoon Creole seasoning
Instructions
  1. In a medium bowl, combine all ingredients. Cover and refrigerate up to 5 days.
