Ingredients
  1. 1 pound ground chicken, white meat only
  2. 1 cup finely shredded sweet potato (about 1 medium)
  3. 2 tablespoons chopped cilantro
  4. ½ teaspoon salt
  5. ½ teaspoon garlic powder
  6. ½ teaspoon ground cinnamon
  7. ½ teaspoon ground coriander
  8. ½ teaspoon paprika
  9. ¼ teaspoon ground cumin
  10. 1 tablespoon vegetable oil
  11. 4 hamburger buns or Kaiser rolls
  12. 1 cup fresh spinach
  13. Cilantro leaves
  14. 1 medium tomato, sliced
  15. Apricot Ketchup, recipe follows
Instructions
  1. In a medium bowl, combine chicken, sweet potato, cilantro, salt, garlic powder, cinnamon, coriander, paprika, and cumin. Form mixture into 4 (3/4-inch thick) patties.
  2. In a large nonstick skillet, heat oil over medium heat. Add patties, and cook 5 to 6 minutes per side or until an instant-read thermometer inserted into center reads 165°.
  3. Serve patties on buns topped with spinach, cilantro, tomato slices, and Apricot Ketchup.

  1. ¼ cup ketchup
  2. 2 tablespoons apricot preserves
  3. ½ teaspoon paprika
  4. ¼ teaspoon ground cinnamon
  5. ¼ teaspoon ground cumin
  6. ¼ teaspoon ground coriander
Instructions
  1. In a small bowl, combine all ingredients. Cover, and refrigerate until serving.
