Cornstarch helps make these sweet potato fries as crispy as they can be.
Air-Fried Sweet Potato Fries with Charred Green Onion Dip
Makes 4 to 6 Servings
Ingredients
- 3 pounds sweet potatoes, cut into 4x¾-inch sticks (about 3 large)
- 4 whole green onions
- 2 tablespoons plus 2 teaspoons olive oil, divided
- ½ cup mayonnaise
- ½ cup sour cream
- 1 tablespoon packed chopped fresh parsley
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 tablespoon plus 1 teaspoon Cajun seasoning, divided
- 1 teaspoon minced garlic
- 3 tablespoons cornstarch
Instructions
- In a large bowl of ice water, place sweet potatoes. Let stand for 1 hour; drain, rinse, and dry thoroughly.
- If preheating is recommended by your air fryer manual, preheat fryer to 400°. Spray basket with cooking spray.
- Brush green onions with 2 teaspoons olive oil. Place in air fryer basket. Set fryer to 400°, and cook until green onions are lightly charred, 8 to 10 minutes, shaking air fryer basket occasionally. Transfer to a cutting board, and let cool enough to handle. Finely chop green onion.
- In a medium bowl, combine green onion, mayonnaise, sour cream, parsley, lemon zest and juice, 1 teaspoon Cajun seasoning, and garlic. Cover and refrigerate until ready to use.
- Preheat oven to 200°.
- In a large bowl, toss together sweet potatoes, cornstarch, remaining 2 tablespoons oil, and remaining 1 tablespoon Cajun seasoning. Place sweet potatoes in a single layer in air fryer basket. Cook until golden and crisp, 14 to 16 minutes, shaking basket and turning halfway through cooking. Transfer to a rimmed baking sheet and keep warm in oven. Repeat until all sweet potatoes are cooked. Serve hot with charred green onion dipping sauce.
