Ingredients
  1. 8 jalapeños, halved and seeded
  2. 1 (8-ounce) package cream cheese, softened
  3. 1 pound ground breakfast sausage
  4. 1 pound bacon, thinly sliced
  5. ¼ cup butter, melted (optional)
Instructions
  1. Preheat oven to 400°. Line a baking sheet with aluminum foil, and top with a metal cooling rack.
  2. Fill each jalapeño half with cream cheese. Make 16 sausage patties. Mold a patty around each jalapeño half, making sure to cover the whole pepper. Wrap one piece of bacon around the sausage.
  3. Bake until bacon is crispy, and sausage is thoroughly cooked, about 12 to 15 minutes on each side. Remove from heat, and brush with melted butter, if desired.

  1. Very good Mrs. Kay and awesome flavor did mine with pineapple cream cheese instead. Hardest part is getting the sausage around the pepper. Slap Jay and willie for us…

  2. I have some friends in the Golden Triangle area that make these with boudain/boudin instead of the sausage patties. So I surprised my brother in law with a batch of them…I bought all the stuff including the boudain without him knowing my plan. He smoked the boudain on the pit before I got up. I think it made it even better. I sure do miss TX and boiled crawfish, fried crawfish tails, & fried shrimp. I live in New Mexico now & there is only 1 place to get good fried shrimp ( a little hole in the wall Mexican Food Place). I would love to give him a better batter/coating recipe for the shrimp. He is using a tempura batter but doesn’t cook it long enough. Some days are better than others…Our Bar B Que place also has shrimp, but they are frozen & fried too long.

    • Hi Kathy. Just wanted to let u know that we r southwest Louisiana transplants to Omaha Nebraska but back in Texas permanently now. Thank God. We used to order live crawfish from Cajun Grocer in Lafayette, LA & they shipped them to us next day in Omaha. Was never disappointed in the crawfish, always alive & good sized. Thought if u ever wanted crawfish really bad, u’d appreciate this info. Lol. They ship every kind of seafood u want.

  3. Instead of covering the jalapenos with sausage I like to put the sausage in the cream cheese (I also add a bit of chorizo) and I stuff my peppers then wrap w/bacon.

  4. Funny…..I only go to comments to get feedback on a recipe and every one tells us how they changed the recipe. No help.
    I made the recipe as written and they were very tasty. Just, after 30 minutes in the oven, flipped once, the bacon still wasn’t crisp and the baking pan had quite a bit of grease in it from the sausage…so I threw them on the grill for a few and they crisped right up.
    I also liked them better after they cooled somewhat. This is one appetizer that doesn’t need to be right out of the oven to be tasty.
