  4. 12 to 16 slices country bread, about 1 inch thick
  5. 6 large eggs
  6. 1 cup all-purpose flour
  7. 2 teaspoons ground black pepper, divided
  8. 1 tablespoon cornstarch
  9. 1 tablespoon cool water
  10. 1 cup grated Parmesan cheese
  11. 1 pound large fresh shrimp
  12. 5 tablespoons olive oil, divided
  13. ΒΌ cup unsalted butter
  14. 6 to 8 fried eggs
  15. Garnish: fresh oregano, fresh arugula, fresh avocado slices
  1. In a medium bowl, combine cream, oregano, and 3 tablespoons Cajun seasoning. Refrigerate for 6 hours or overnight. On 2 baking sheets, place bread slices in a single layer; let sit uncovered overnight.
