Countless restaurants across the country have their own versions of chocolate lava cake, and for good reason. The popular dessert is decadent and, coincidentally, couldn’t be easier to prepare. We’ve taken the classic recipe and kicked it up a notch by adding zesty orange liqueur and subtly spicy cardamom for a more complex and sophisticated flavor.

Chocolate Orange Cardamom Lava Cake

Serves 6
Ingredients
- 10 tablespoons unsalted butter, plus additional for greasing ramekins
- 4 ounces bittersweet chocolate
- 4 ounces semi-sweet chocolate
- ½ cup all-purpose flour
- 1 cup confectioners’ sugar
- ¼ teaspoon salt
- 3 large eggs, lightly beaten
- 3 large egg yolks
- 2 teaspoons orange zest
- 1/2 teaspoon vanilla extract
- 1 tablespoon orange liqueur*
- 1/2 teaspoon ground cardamom
- Cardamom Whipped Cream, recipe follows
- Garnish: unsweetened cocoa powder
Instructions
- Preheat oven to 425°. Lightly grease 6 (6-ounce) straight-sided ramekins with butter.
- In a double boiler, melt butter and chocolates. Stir in flour, confectioners’ sugar, and salt until just combined. Add eggs and yolks, and stir until combined. Add zest, vanilla, liqueur, and cardamom. Divide batter evenly among ramekins.
- Bake until edges are firm but center is still runny, about 10 minutes. Top with Cardamom Whipped Cream and unsweetened cocoa powder, if desired.
Notes
- For testing, we used Grand Marnier.

Cardamom Whipped Cream

Ingredients
- 1 cup heavy whipping cream
- 3 tablespoons confectioners’ sugar
- 1/4 teaspoon ground cardamom
Instructions
- In a medium bowl, beat cream at high speed with an electric mixer until soft peaks form. Add confectioners’ sugar and cardamom, and beat until stiff peaks form.
