A light and fresh Citrus Salad.

Ingredients
  1. 3 oranges, segmented
  2. 2 grapefruit, segmented
  3. 4 satsumas or tangerines, segmented
  4. 2 avocados, sliced
  5. 2 heads endive leaves
  6. 2 heads frisée, chopped
  7. 2 stalks celery, sliced
  8. ¼ cup sliced toasted almonds
  9. ½ cup Creamy Champagne-Orange Vinaigrette, recipe follows
  10. Garnish: micro celery and micro greens
Instructions
  1. In a large bowl, combine orange, grapefruit, satsuma, avocado, endive, frisée, celery, almonds. Drizzle with creamy Champagne-Orange Vinaigrette. Garnish with micro celery and micro greens, if desired.

Creamy Champagne-Orange Vinaigrette

Ingredients
  1. ½ cup sour cream
  2. 2 tablespoons Champagne vinegar
  3. 2 tablespoons fresh orange juice
  4. 2 teaspoons honey
  5. 1 teaspoon kosher salt
Instructions
  1. In a small bowl combine sour cream, vinegar, orange juice, honey, and salt. Cover, and refrigerate up to 3 days.
