A fun potato salad with flavors reminiscent of a springtime crawfish boil.

Ingredients
  1. 1 pound boiled red potatoes, quartered
  2. 1 link andouille sausage, chopped
  3. 2 ears boiled corn, kernels cut from cob
  4. ½ cup mayonnaise
  5. 1 tablespoon Dijon mustard
  6. 2 teaspoons chopped fresh thyme
  7. 1 teaspoon chopped fresh oregano
  8. 1 teaspoon salt
  9. ½ teaspoon ground black pepper
  10. ½ teaspoon paprika
  11. ¼ teaspoon ground cayenne pepper
  12. 1 clove garlic, minced
Instructions
  1. In a large bowl, combine potatoes, sausage, and corn. Set aside.
  2. In a small bowl, add mayonnaise, mustard, thyme, oregano, salt, black pepper, paprika, cayenne, and garlic; whisk to combine. Pour mayonnaise mixture over potato mixture, and toss until combined.

    • Thanks for your comment! The name of this recipe might be a little confusing. It’s supposed to have many of the same ingredients you’ll find at a crawfish boil, but it doesn’t have crawfish in it. That said, crawfish would taste terrific in this potato salad. You’d probably want to mix in 1 to 2 cups of cooked crawfish tails in the first step.

  1. I substituted crawfish for the andouille sausage and regular mustard for Dijon, and it was fantastic!!! Tried lots of post crawfish boil potato salads, but the spice combo in this recipe is the best yet! Wife and I have been texting it to our friends. Thanks for sharing.
