Red Quinoa and Couscous Salad
Yields: 5 cups
 
Ingredients
  • 2½ cups water, divided
  • ½ cup red quinoa
  • 1 cup couscous
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon kosher salt
Instructions
  1. In a large saucepan, bring 1 cup water to a boil over medium-high heat. Add quinoa; reduce heat to medium-low. Cover and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  2. In another large saucepan, bring remaining 1½ cups water to a boil over medium-high heat. Add couscous; remove from heat. Cover and let stand until couscous is just tender and water has been absorbed, 5 to 7 minutes.
  3. In a large bowl, combine quinoa and couscous. Add oil, lemon juice, and salt, stirring to combine.
