Blackened Catfish with Cauliflower Rice
 
Makes 4 Servings
Ingredients
  • 1 tablespoon vegetable oil
  • 2 tablespoons blackening seasoning
  • 4 (6- to 7-ounce) catfish fillets
  • 2 (10-ounce) packages fresh cauliflower rice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chopped fresh cilantro
  • ½ teaspoon kosher salt
  • Lime wedges, to serve
  • Garnish: chopped cilantro
Instructions
  1. In a large cast-iron skillet, heat oil over medium-high heat.
  2. Sprinkle blackening seasoning all over catfish. Carefully place fish in skillet. Cook until well browned and flakes easily with a fork, 4 to 5 minutes per side.
  3. In a medium skillet, heat cauliflower rice over medium heat until heated through, 5 to 10 minutes. Stir in lime juice, cilantro, and salt. Serve fish over cauliflower rice with lime wedges. Garnish with cilantro, if desired.
