Sour Cherry Sauce
  • 4 cups pitted sour cherries
  • 1 cup thinly sliced onion
  • 1 cup red wine vinegar
  • 2 quarts low-sodium pork or chicken stock
  1. In a large stockpot, heat cherries over medium heat. Cook for 5 minutes, stirring frequently. Add onion, and cook for 5 minutes. Add vinegar, and reduce until syrupy. Add stock, and simmer until reduced and thickened, about 
1½ hours.
