French Toast Casserole with Praline-Brandy Sauce

Big, boisterous family meals are one of the best parts of the holidays, but also one of the biggest challenges. Each year, we try to find more ways to spend more time enjoying our company while still managing to cook heartwarming meals. A little preparation the night before makes this rich French toast casserole an easy morning delight.

French Toast Casserole with Praline-Brandy Sauce

Ingredients
  1. 2 (8-ounce) day-old demi baguettes,
  2. cut into ½-inch-thick slices
  3. 6 large eggs
  4. 1 cup firmly packed light brown sugar, divided
  5. 2½ cups whole milk
  6. ¼ cup unsalted butter, melted
  7. 1 teaspoon ground cinnamon
  8. 2 teaspoons vanilla extract
  9. ¼ teaspoon ground nutmeg
  10. ⅛ teaspoon kosher salt
  11. Praline-Brandy Sauce (recipe follows)
  12. Garnish: strawberries
Instructions
  1. Spray a 13x9-inch baking dish with cooking spray.
  2. Arrange bread slices in prepared dish, overlapping slightly. In a medium bowl, whisk together eggs and ¾ cup brown sugar. Whisk in milk, butter, cinnamon, vanilla, nutmeg, and salt. Pour over bread; sprinkle with remaining ¼ cup brown sugar. Cover tightly with foil. Refrigerate at least 8 hours.
  3. Preheat oven to 350°.
  4. Bake, covered, 30 minutes. Uncover; bake until lightly browned, about 15 minutes more. Serve with Praline-Brandy Sauce, and garnish with strawberries, if desired.

Praline-Brandy Sauce

Ingredients
  1. 1½ cups firmly packed light brown sugar
  2. ¼ cup water
  3. ¼ cup brandy
  4. ¼ cup heavy whipping cream
  5. 3 tablespoons unsalted butter
  6. 1½ tablespoons dark corn syrup
  7. ⅛ teaspoon kosher salt
  8. 1½ cups chopped toasted pecans
  9. 1 teaspoon vanilla extract
Instructions
  1. In a large saucepan, whisk together brown sugar, ¼ cup water, brandy, cream, butter, corn syrup, and salt. Bring to a boil over medium-high heat, stirring frequently. Reduce heat to medium-low, and simmer until syrupy, about 5 minutes. Remove from heat. Stir in pecans and vanilla. Let cool slightly. Serve warm.
