Mashed Cauliflower with Spicy Butter

If you like mashed potatoes, you’re going to love this mashed cauliflower recipe. This dish has all the creaminess and fluffiness we crave in mashed potatoes.

Mashed Cauliflower with Spicy Butter
 
Makes 4 to 6 Servings
Ingredients
  • 1 large head cauliflower, stem and leaves removed, cut into florets (about 2½ pounds)
  • 1 cup shredded Parmesan cheese
  • ½ cup heavy whipping cream
  • 8 tablespoons unsalted butter, divided
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1 tablespoon hot sauce*
  • 1 teaspoon Cajun seasoning*
  • ½ teaspoon paprika
  • Garnish: shredded Parmesan cheese, chopped green onion
Instructions
  1. In a large saucepan, bring cauliflower and water to cover by 1 inch to a boil over medium-high heat. Cover and cook until fork-tender, 13 to 15 minutes. Drain cauliflower, and return to pan. Using a potato masher, mash to desired consistency. Stir in cheese, cream, 2 tablespoons butter, salt, and garlic powder until combined. Transfer cauliflower mixture to a serving bowl.
  2. In a small saucepan, melt remaining 6 tablespoons butter over low heat. Whisk in hot sauce, Cajun seasoning, and paprika until fully combined. Drizzle desired amount of butter mixture onto mashed cauliflower. Serve with any remaining butter mixture. Garnish with cheese and green onion, if desired. Serve immediately.

KITCHEN TIP: Mashed cauliflower keeps well overnight in the refrigerator and heats up great in the microwave.
