Peach-Ginger-Honey Pie

Ingredients
- 2 Basic Piecrusts, divided,
- 6 medium peaches, peeled, pitted, and diced
- 1 tablespoon grated fresh ginger
- 2 cups honey
- ¼ cup sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon kosher salt
- 4 large eggs
- 1 teaspoon water
Instructions
- Preheat oven to 350°.
- On a lightly floured surface, roll 1 Basic Piecrust to ⅛-inch thickness. Transfer to a 9-inch deep-dish pie plate, and gently press into the bottom and up the sides. Trim or crimp edges as desired. Refrigerate 20 minutes.
- In a large saucepan over medium heat, add peaches and ginger. Cook, stirring, until peaches begin to release their juice, about 15 minutes. Add honey, sugar, flour, cornstarch, and salt. Stir until combined. Add 3 eggs, and stir until combined. Pour into prepared crust.
- On a lightly floured surface, roll remaining Basic Piecrust to ⅛-inch thickness. Using a pizza cutter or sharp knife, slice dough into 1½-inch strips. Lay over pie filling in a basket-weave pattern.
- In a small bowl, add remaining 1 egg and 1 teaspoon water, and lightly whisk to combine. With a pastry brush, brush exposed dough with egg wash. Bake until firm in the center, about 1 hour. Let cool 1 hour, and serve warm.

- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon salt
- ¾ cup cold unsalted butter, cubed
- 1 large egg
- 2 tablespoons cold water
Instructions
- In a large bowl, sift together flour, sugar, and salt.
- In the work bowl of a food processor, add flour mixture and butter; process until flour resembles course crumbs, about 45 seconds.
- Add egg and 2 tablespoons water; process until dough forms a ball. Shape into a disk, wrap in plastic wrap, and refrigerate 30 minutes or up to overnight. Remove from refrigerator 15 minutes before rolling.

The filling was way too much for a 9 inch pie, could have made two pies with the filling. Was wondering if the 2 cups honey was a miss print, don’t think you need that much honey.
