
Prosciutto Shrimp Skewers

These Prosciutto Shrimp Skewers are perfect for a fall afternoon outdoors.
Ingredients
- 12 large fresh shrimp, tails on and deveined (about ¾ pound)
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 4 ounces sliced prosciutto, halved
- 12 (6-inch) wooden skewers, soaked in water for 30 minutes
- 12 grape tomatoes
- Herb Dipping Sauce, recipe follows
Instructions
- In a large bowl, combine shrimp, olive oil, salt, and pepper, and toss until coated.
- Thread prosciutto ribbon-like onto skewers, followed by shrimp and tomato.
- Spray a griddle pan with nonstick cooking spray, and place over medium-high heat. Cook until shrimp are pink and firm, about 2 minutes per side. Serve with Herb Dipping Sauce.

- 2 tablespoons fresh lemon juice
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme leaves
- 1 tablespoon chopped fresh parsley
- 2 teaspoons molasses
- ½ teaspoon kosher salt
- ¼ teaspoon cayenne pepper
Instructions
- In a small bowl, combine mayonnaise, lemon juice, rosemary, thyme, parsley, molasses, salt, and pepper. Cover, and refrigerate until ready to serve.
