These Prosciutto Shrimp Skewers are perfect for a fall afternoon outdoors.

  1. 12 large fresh shrimp, tails on and deveined (about ¾ pound)
  2. 1 tablespoon extra-virgin olive oil
  3. 1 teaspoon kosher salt
  4. ½ teaspoon ground black pepper
  5. 4 ounces sliced prosciutto, halved
  6. 12 (6-inch) wooden skewers, soaked in water for 30 minutes
  7. 12 grape tomatoes
  8. Herb Dipping Sauce, recipe follows
  1. In a large bowl, combine shrimp, olive oil, salt, and pepper, and toss until coated.
  2. Thread prosciutto ribbon-like onto skewers, followed by shrimp and tomato.
  3. Spray a griddle pan with nonstick cooking spray, and place over medium-high heat. Cook until shrimp are pink and firm, about 2 minutes per side. Serve with Herb Dipping Sauce.

  1. ¼ cup mayonnaise
  2. 2 tablespoons fresh lemon juice
  3. 1 tablespoon chopped fresh rosemary
  4. 1 tablespoon chopped fresh thyme leaves
  5. 1 tablespoon chopped fresh parsley
  6. 2 teaspoons molasses
  7. ½ teaspoon kosher salt
  8. ¼ teaspoon cayenne pepper
  1. In a small bowl, combine mayonnaise, lemon juice, rosemary, thyme, parsley, molasses, salt, and pepper. Cover, and refrigerate until ready to serve.
