Shaved Brussels Sprouts with Bacon Vinaigrette

- 4 cups shaved Brussels sprouts (about 1 pound)
- 2 Gala apples, peeled, cored, and cut into matchsticks
- 1 cup thinly sliced celery
- 1 cup chopped Spiced Pecans, recipe follows
- 1/4 cup Bacon Vinaigrette, recipe follows
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
Instructions
- In a large bowl, combine Brussels sprouts, apple, celery, Spiced Pecans, Bacon Vinaigrette, salt, and pepper.

Spiced Pecans

Ingredients
- 2 cups pecan halves
- 2 tablespoons melted unsalted butter
- 1 teaspoon honey
- 1 tablespoon chopped fresh sage
- 1 teaspoon kosher salt
- ¼ teaspoon cayenne pepper
Instructions
- On a rimmed baking sheet spread pecans evenly. Bake until toasted and fragrant, about 30 minutes. Reserve baking sheet.
- In a medium bowl, add pecans, and toss with butter, honey, sage, salt, and cayenne until combined. Spread evenly on baking sheet, and let cool for 15 inutes. Store in a resealable plastic bag up to 3 days.

- ¼ cup chopped cooked bacon
- ¼ cup warm rendered bacon fat
- 2 tablespoons red wine vinegar
- 1½ teaspoons extra-virgin olive oil
- ½ teaspoon minced garlic
- ½ teaspoon honey
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
Instructions
- In the container of a blender, combine bacon, rendered bacon fat, vinegar, olive oil, garlic, honey, salt, and pepper; process on high until combined. Cover, and refrigerate up to 5 days.
