Spicy Sausage and White Bean Soup
Ingredients
- 1 pound Blue Runner Premium Select Navy Beans
- 1 teaspoon olive oil
- 1 pound spicy Italian sausage
- 1 red onion, diced
- 2 large carrots, sliced
- 2 tablespoons minced garlic
- 6 cups chicken broth
- 2 cups spinach
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon Italian seasoning
- 1 cup half & half
Instructions
- Soak beans for a few hours, then place in pressure cooker with some water and cook for 25 minutes on high pressure. Once cooked, allow pressure to naturally release.
- Heat oil in a large pot. Cook sausage.
- Add onions, garlic, and carrots. Cook 3-4 minutes.
- Add broth, beans, salt, Italian seasoning and bay leaves. Bring to a boil, reduce heat, summer for 25 minutes until carrots are tender.
- Stir in spinach and half & half and serve.
