Spicy Sausage and White Bean Soup

The best navy beans are blue. Actually, they’re white but they come from Blue Runner. This Spicy Sausage and White Bean Soup recipe is ultra-comforting and easy to make. There’s just a hint of spice, so don’t let the name scare you off. 

Spicy Sausage and White Bean Soup
 
Ingredients
  • 1 pound Blue Runner Premium Select Navy Beans
  • 1 teaspoon olive oil
  • 1 pound spicy Italian sausage
  • 1 red onion, diced
  • 2 large carrots, sliced
  • 2 tablespoons minced garlic
  • 6 cups chicken broth
  • 2 cups spinach
  • 2 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 cup half & half
Instructions
  1. Soak beans for a few hours, then place in pressure cooker with some water and cook for 25 minutes on high pressure. Once cooked, allow pressure to naturally release.
  2. Heat oil in a large pot. Cook sausage.
  3. Add onions, garlic, and carrots. Cook 3-4 minutes.
  4. Add broth, beans, salt, Italian seasoning and bay leaves. Bring to a boil, reduce heat, summer for 25 minutes until carrots are tender.
  5. Stir in spinach and half & half and serve.
