Sweet Potato-Apple Latkes

Ingredients
  1. 1 cup peeled and coarsely shredded Granny Smith apple
  2. 3 cups peeled and coarsely shredded sweet potato (about 1 pound)
  3. 2 tablespoons finely chopped yellow onion
  4. 1/3 cup all-purpose flour
  5. 2 tablespoons finely chopped fresh sage
  6. ½ teaspoon smoked paprika
  7. ½ teaspoon salt
  8. ¼ teaspoon ground black pepper
  9. 1 large egg
  10. ¼ cup canola oil, divided
  11. Tangy Buttermilk Sauce (recipe follows)
  12. Garnish: chopped fresh sage
Instructions
  1. In a clean dishtowel, add apple and squeeze until excess liquid is released. In a medium bowl, combine apple, sweet potato, onion, flour, sage, paprika, salt, pepper, and egg.
  2. In a medium nonstick skillet, heat 2 tablespoons oil over medium heat. Add sweet potato mixture in ¼-cup scoops, in batches. Flatten with a spatula to ½-inch thick. Cook 2 to 3 minutes per side or until golden. Transfer to a wire rack or paper towels.
  3. Repeat procedure with remaining 2 tablespoons oil and sweet potato mixture.
  4. Garnish with sage, if desired. Serve warm with Tangy Buttermilk Sauce.

Tangy Buttermilk Sauce

  1. 1/3 cup low-fat buttermilk
  2. 1/3 cup low-fat sour cream
  3. 1 teaspoon fresh lemon juice
  4. 1/8 teaspoon ground black pepper
  5. 1/8 teaspoon salt
Instructions
  1. In a medium bowl, whisk together all ingredients. Cover and refrigerate up to 3 days.
