Wedge Salad with Candied Bacon

Candied bacon adds the slightest hint of sweetness to this Wedge Salad.

Ingredients
  1. 1 cup whole buttermilk
  2. ½ cup sour cream
  3. ¼ cup mayonnaise
  4. 2 teaspoons Dijon mustard
  5. ¼ teaspoon kosher salt
  6. 1/8 teaspoon ground black pepper
  7. 6 wedges iceberg lettuce
  8. 2 cups crumbled blue cheese
  9. 2 tablespoons chopped fresh parsley
  10. Candied Bacon (recipe follows)
Instructions
  1. In a medium bowl, whisk together buttermilk, sour cream, mayonnaise, mustard, salt, and pepper. Cover and chill at least 1 hour and up to 12 hours. Drizzle buttermilk mixture over lettuce wedges. Add cheese, parsley, and Candied Bacon. Serve immediately.

Candied Bacon

Ingredients
  1. ½ cup firmly packed light brown sugar
  2. 1/8 teaspoon kosher salt
  3. ¼ teaspoon cayenne pepper
  4. 1/8 teaspoon ground black pepper
  5. 6 slices thick-cut bacon
Instructions
  1. Preheat oven to 375°. Line a large rimmed baking sheet with foil. Place a wire rack coated with cooking spray in rimmed baking sheet.
  2. In a medium bowl, combine sugar, salt, and peppers. Press sugar mixture onto bacon. Place bacon on wire rack.
  3. Bake until deep brown and edges are crisp, about 25 minutes. Let cool completely on rack. Using a spatula, gently remove from rack; tear into pieces.
