Ingredients
  1. 1 (6-ounce) box wild rice, cooked according to package directions and cooled
  2. 1 cup chopped fresh mango
  3. 1 cup chopped avocado
  4. ¼ cup chopped green onion
  5. Mint Vinaigrette, recipe follows
Instructions
  1. In a medium bowl, combine rice, mango, avocado, and green onion. Add Mint Vinaigrette, and toss gently to coat. Serve immediately.

  1. 2 tablespoons white wine vinegar
  2. 2 tablespoons fresh lime juice
  3. 1 tablespoon olive oil
  4. 2 teaspoons sugar
  5. ¼ teaspoon ground black pepper
  6. 2 tablespoons chopped fresh mint
Instructions
  1. In a small bowl, combine vinegar, lime juice, olive oil, sugar, and pepper; whisk until sugar dissolves. Add mint, and whisk to combine.
