Alligator Chili Frito Pie

Ingredients
  1. ½ cup vegetable oil
  2. 4 pounds ground alligator meat
  3. 2 pounds ground beef
  4. 4 cups diced onion
  5. 2 cups diced celery
  6. 2 cups diced bell pepper
  7. 4 tablespoons diced garlic
  8. 4 tablespoons diced jalapeño
  9. 2 (16-ounce) cans pinto beans
  10. 6 (8-ounce) cans tomato sauce
  11. 2 cups chicken broth
  12. 2 tablespoons chili powder
  13. 2 teaspoons ground cumin
  14. Salt, to taste
  15. Cracked black pepper, to taste
  16. 15 (3-ounce) bags corn chips
  17. Garnish: shredded cheddar cheese,
 minced red onions, sliced green
 onions, sliced jalapeño peppers
Instructions
  1. In a large Dutch oven, heat oil over medium high heat. Add alligator and beef; sauté 20 minutes to render juices. Add onion, celery, bell pepper, garlic, and jalapeno. Sauté until vegetables are softened, 3 to 
5 minutes. Add beans, tomato sauce, and broth; bring to a low boil. Reduce heat, and simmer.
  2. Add chili powder and cumin, and stir well; cook 1 hour, stirring occasionally. Once alligator is tender, season to taste with salt and black pepper. Cut open corn chip bags, and ladle the chili into the bags. Garnish with cheese, onions, and jalapeño, if desired.
